I just found out about Vegan Month of Food, (Vegan MoFo), hosted by Post Punk Kitchen. Since I missed the deadline, I am not part of the official blog roll but that's ok, I'm going to join in the fun anyway!
This means I will be posting daily, or nearly so, about 100% vegan topics. So you won't be seeing any pictures of my carnivorous man chowing down on meaty meals, ok? I know, it's a disappointment as he is a cutie pie but I'll make sure to take some non-foodie pics of him to ensure that we all get our Chip fix.
In other news...with the hustle and bustle of the weekend travel, I neglected to share with you my Weight Watchers weigh-in; I'm happy to report a 1.4 pound loss. I'm so happy to see the scale move in the right direction, I'm going to celebrate every singe ounce lost.
At the meeting we were issued an 8-Weeks-to-Thanksgiving Challenge, asked to visualize how we want to look & feel on Thanksgiving Day, what we'd like to wear, etc, and then commit to a weight loss goal. I decided that a 6-pound loss in 8 weeks is do-able, so that's my goal. This will be my first Thanksgiving as a vegan, have already started to talk to the family about some menu changes, more about that later. (Of course I realize it's just 7.5 weeks now, better get busy!)
It looks like we'll be headed back to Jacksonville tomorrow so I'm going to use my "real" kitchen time wisely. I'm making a meal plan for the rest of the week, will be headed to the grocery store soon. I'll be popping back in later with recipes to share, so be sure to stop by for another visit!
