Vegan Kickstart, Days Sixteen Through Eighteen

Food: 21-Day Vegan Kickstart & Beyond. I did some picking & choosing from the past few days' menus, based upon what sounded appealing to me.  Sunday afternoon we had errands to run, grabbed a sandwich from our favorite sub shop. This place has been here forever, as long as Chip and I can remember.  Fond memories of our teenage dating days, and they have great food!

Here are some of the meals from the last couple of from the Kickstart, others DIY based upon the plant-based/low-fat guidelines.

I have three more days left of the Kickstart, but I notice that it's started officially over at the website, so if you want to join them, this would be a great time to do so!

Fitness:  Thanks to almost continual rain, it was a very low-key weekend.  Other than a dog walk and the usual daily activity, I did nothing. This week will be better.

Personal:  It looks like we might be headed up north sooner than expected, possibly this coming weekend.  As much as I enjoy seeing my kids and friends, I miss Ormond. The proximity to the beach can't be beat, and the slower pace really appeals to me at this point in my life.  We aren't big "night life" people so being this close to Ft Lauderdale & Miami is sort've wasted on us.  My children are grown so I no longer need the good schools, etc that comes with a suburban lifestyle; a sleepy little beach town is perfect for me.  Oh, and a cabin in the mountains would be nice as well, am working on that one!

With that in mind, I'm going to keep my grocery shopping to a minimum, use up what I have on hand as much as possible.  I will be working in the 21-Day Vegan Kickstart recipes, but likely not following 100% for the last few days.

  1. I think that must be the only downside to the kickstart - the needing to have lots of different bits and pieces on hand. I do like the idea of the program - a proper inspiration to try new things. That veggie sub looks really appealing in particular!

    1. Joey, exactly! The veggie sub was quite yummy, the remaining half went to work w/my daughter today.

  2. The veggies of the sub are the very best part. Kind of scary and thrilling to bite into a hot pepper! :D

    1. Marion, so true! When I order a sub I just say, "Put as much veggies as you can on there! No cheese, no oil, no mustard/mayo, just veggies!" Then they ask, "Hot peppers, too?" Hell, yeah! They're the best part! :)
