YouTube Tuesday: Nigella's Breakfast Bruschetta

Big thank you to Accidentally Vegan for posting this video of my favorite non-vegan chef, Nigella Lawson.  Her Breakfast Bruschetta looks amazing! The only change I would make is to eliminate most, if not all, of that olive oil.  Otherwise, yum!


  1. My internet connection stinks, so I can't watch the video right now but it sounds yummy. Do you want to reduce the olive oil to lower the fat content of the dish? I read recenty that reducing oils also increased the percentage of protein that your meal contains. I never thought of it that way before, but it makes sense. These days I think my protein requirement is a little higher than it used to be because I work so hard on the farm. (Getting some good arm muscles from hoeing and lifting! lol!)

  2. Aisling, I try to follow McDougall, Esselstyn, Barnard, etc.'s way of eating which is whole food, vegan, no added oils. I do use a smidge of Earth Balance on my toast now & then but otherwise, no added fat. I think we get enough fat from natural sources such as avocado and nuts, don't need to add them. I'm not perfect..grin..and occasionally give in to the call of sweets & treats, but not on a daily basis.

    I so hope to visit your farm one day!

  3. I would love to have you visit. We should get on the phone sometime and plan that. It is most beautiful in our region in summer or fall. The colors here are fantastic in autumn.
