We had such a great time visiting my kids in Gainesville..
Sunday Brunch at The Top
Loki visiting Lucy's new house
but after a few days of little birthday-related indulgences..
Garlic Knots & Cheese-free Veggie Pizza
Vegan Chocolate Mocha Cupcake (thank you, Lindsey!)
It's time to clean up my diet and get back on track. I must admit, as delicious as the meals/treats were, I woke up at 3 am with a terrible tummy ache, testimony to how unaccustomed my body now is to such indulgences!
Since I was already awake, I figured I'd get up and make wise us of the early morning quiet. We're home in Ormond this week so I'll have plenty of time to plan/shop/chop/cook, no excuses! I don't plan on eating out all week, really craving my own cooking!
Here's five days of recipes, allowing for a couple of leftover meals:
- Easy Vegan Spinach and Mushroom Lasagna from Fat-Free Vegan Kitchen
- McDougall's Texan Vegetable Casserole
- Happy Herbivore's Cheater Pad Thai
- Dr. Barnard's Mixed Vegetable Curry with Whole Wheat Couscous
- Fat-Free Vegan's Red Beans and Rice for 2
I'm also determined to get back into my exercise routine. If I get to the beach early in the morning I can enjoy my walk before it's unbearably hot. When that's not possible, I have my trusty treadmill as backup.
We're down one car this week, the Hybrid needed some maintenance, so I'll have to drop Chip at work and then hit the grocery store. More java, then off I go!
Have a wonderful Monday..
