Happy New Year!

I hope 2014 is off to a wonderful start! Chip and I spent the day lounging around the house, don't think I even got out of my pajamas until noon. Scandalous, I know, but what better way to ring in the new year than with a bit of self-indulgence?

After a lazy day of TV-watching, reading, & puttering, I made my way into the kitchen and prepared a traditional New Year's meal, with a vegan twist..

The Hoppin' John comes from my new favorite site, Thug Kitchen, whose posts make me laugh out loud and drool at the same time! Unabashedly comprised of salty language that might cause the average housewife to blush, the recipes are to-die-for. I have yet to be disappointed, and today's offering was no exception.

I served mine over brown rice with a side of steamed collard greens, and of course cornbread!  I've tried several vegan versions and none quite measure up, but this recipe from Chocolate-Covered Katie was pretty darn good! A bit more crumbly than I like but with a tiny dollop of Earth Balance on the top, it was moist and tasty and a perfect accompaniment to this spicy dish.

Have a wonderful day,

  1. Happy New Year to you too!
If you like the Thug Kitchen you might enjoy The Vegan Stoner as well: I like the cute little drawings of the food.

    1. Thank you, Ines! I do enjoy The Vegan Stoner; in fact, I bought my daughter the cookbook for Yule. :)

  3. Happy new year!! I must be very scandalous then because I ALWAYS get dressed around noon; the earliest so far has been around 11:40 in the morning. Hahah

That meal looks so delicious by the way! It made my mouth water!!
Hope 2014 brings you everything you'd like to achieve in.
